This Specialty Coffee was grown on the Finca La Guamera in the Caldas region of Colombia. The coffee cherries are very sweet thanks to a special fertilization program managed by the Muñoz family, after achieving the right maturation they are fermented and dried with the Honey Honey method.

COFFEE PROCESSING

La finca La Guamera selects batches of coffee that are the result of a special fertilization program lasting 2 years and then proceeding with the Honey processing. This program allows you to get cherries with more than 20 degrees Brix – index of sugar content – this means very sweet cherries.
After the harvest, the drupes are transferred to the Finca Berlin which has 600 square meters of raised beds for drying coffee. It is the largest processing station of its kind in all of Colombia. The drying areas are covered with light polymeric sheets and are equipped with air fans that are automatically activated when the temperature reaches 40 degrees.
The Honey method requires that 70% of the mucilage is left on the cherries during pulping. Then the coffee first undergoes a fermentation whose duration can vary from 36 to 42 hours and then is spread on the raised beds to dry until it reaches a humidity level of 20%. Subsequently, it is placed in a drying silo until it reaches a humidity level of 11.5%.

THE MUÑOZ FAMILY

The 5 Muñoz brothers and sisters, inherited the property Finca La Guamera from their mother who received it from her grandfather herself. The small farm in the hills above the town of Chinchina was no longer used until about thirty years ago. In 1985, after the catastrophe of the eruption of the Nevado de Ruiz volcano, new farmers moved to the lands near La Guamera. Since they had no experience in coffee cultivation, nor the infrastructure or knowledge to work coffee after harvesting, they sold it to the Muñoz family who had a small washing station.
While the family had never intended to become coffee buyers, this allowed them to grow a coffee processing and export business with a company called La Meseta in memory of their grandfather. The Muñoz family continues to cultivate and process coffee produced on the property of the Guamera in the same place where the family home is located. The trees have been well maintained generation after generation and produce very meaty drupes that lend themselves very well to the natural process, both to the honey process and also to the classic Colombian washed process (the Classic Colombian fully washed process)

THE CALDAS REGION

This region is the most important for coffee production in Colombia. With the neighboring regions – Risaralda and Quindío – it forms the coffee axis or coffee triangle, intended as a relevant area in coffee-related activities with social programs and research centers. These structures are part of the Coffee Cultural Landscape recognized by UNESCO as a place of the World Coffee Culture Heritage.
The landscape of the Caldas region is drawn by hills with slopes planted with coffee trees. Some small hill towns are built along the mountain ridges where coffee producers have settled using single coffee crops. The plantations are protected from the excess of sun thanks to the constant cloud cover.
Many programs of the Colombian Coffee Growers Federation have their official offices in this region, such as the Cenicafe research center.
Furthermore, most of the fincas of this region are accessible through the main roads. This facilitates process and export speed. In addition to allowing coffee producers and their families easy access to centers of life and education.
